Fig and Goat Cheese Salad with Cacao Nib Praline

A very basic salad with big punch!  The cacao nibs go a long way to dressing up these greens.

  1. 2 cups Spring mix salad leaves or enough for 2 people

  2. 2 large Fresh Figs or 4 small ones

  3. Goat Cheese

  4. 2 tablespoons White Balsamic glaze

  5. 1/4 cup Cacao Nibs

  6. 1 tablespoon Organic Cane Sugar

  7. 1 tablespoon Butter

  2. 2 large Fresh Figs or 4 small ones

Instructions



Add cacao nibs and butter to a medium sized fry pan. Toast for about 2 minutes then add in sugar. Stirring often to avoid burning continue to toast cacao nibs for another 2-3 minutes until fragrant.


Transfer to parchment paper to cool.


Separate the spring mix into 2 salad bowls or plates. Quarter each fig and place in centre of salad. Dot the salad with goat cheese. Drizzle with balsamic glaze then top each bowl with half the cacao nibs.


Serve and enjoy!
